Prosciutto wrapped asparagus /// Recipe Wednesday



Melt in your mouth yummm. Again, something easy and lighter this time around as well spring will be here within a blink of an eye and those extra treats from this winter are pissing me off and hanging around LOL... So I made this with wild rice and sliced cucumbers and a fabulous glass of wine. (My daughter would have nothing to do with this recipe though, so a bowl of mac and cheese and carrots for her. Enjoy!

INGREDIENTS

1/2 pound prosciutto, sliced
1/2 (8 ounce) package Neufchatel cheese, softened
12 spears fresh asparagus, trimmed

DIRECTIONS

Preheat oven to 450 degrees F (230 degrees C).
Spread prosciutto slices with Neufchatel cheese. Wrap slices around 2 or 3 asparagus spears. Arrange wrapped spears in a single layer on a medium baking sheet.
Bake 15 minutes in the preheated oven, until asparagus is tender.

i had these back in august when me and some friends made it for a dinner :)
it was delicious even though our asparagus was rock hard (strangely).
kind of salty but yummy nonetheless!

Yes! I just bought asparagus and I wasn't sure how to use it. I'm going to a dancer party tomorrow and I needed food ideas. This is perfect. BTW, baked proscuitto is just about the best thing ever.
