Arancine (Saffron Rice Balls)



Made these delicious saffron rice balls also called Arancine last night and definitely found a new favorite Italian treat that I will make often. I will admit though the preparation was longer then I thought, but worth it!! I substituted the arborio rice and saffron spice (well it is the most expensive spice in the world!!) with 2 packages of Mahatma brand saffron yellow and long grain rice instead. Turned out amazing, and quite filling, I only needed 3 with a side of asparagus. :p Enjoy xo

Oh yummy! And smart move on the substitute. Saffron is way too expensive but sooo good.
